Woke one morning last week and I felt like baking! Before school! What was I thinking?! I know you are imagining a disaster with 3 Mr Men running around the house – partially dressed, me yelling at them to stop annoying each other, they on the other hand continuing to ignore my pleas & goad each other, argue & well, generally be boisterous young boys!
But… 25 minutes later out of the chaos emerged the aptly named “Coco Loco Mini Muffins” these are simply delicious, nut free, clean & a perfect fit for Mr Men’s lunch boxes.
The aroma of coconut was all I could smell in the house & well it simply smelled Yum!! We all sampled one before school & these have been a massive hit since.
Not only are these gems tasty, they are gluten free, nut free, paleo friendly & nutritious. The blueberries are known for their antioxidants, the coconut provides good fats & dietary fibre, eggs are rich in protein & the honey provides a natural source of energy – perfect for energetic children & adults alike!
- 2/3 cup coconut oil
- ½ cup honey
- 6 whole medium eggs
- ½ tsp vanilla essence
- Pinch of salt
- 55 gm Coconut flour
- 5-6 tbsp shredded Coconut
Mix coconut oil, honey, eggs, vanilla essence, and salt well. Then add the coconut flour & baking powder mix until smooth consistency.
Gently mix through half of the shredded coconut & blueberries, and pour into muffin trays/cupcake cases. Sprinkle tops with remaining coconut and bake for about 20mins.
Makes 24 small muffins or 12 large muffins (small ones are perfect for lunch boxes!).
